This is a fairly well worked area!

Have a look at "Measurement of Postmelt Chewiness of Mozzarella Cheese" by L. E. METZGER and D. M. BARBANO (1999). You can download the article from J Dairy Science at
http://jds.fass.org/cgi/reprint/82/11/2274 .There are some useful references in this article. You might then look at others who have cited this article to get more recent research.
