There are many reasons to put a cheese vat on a platform. The main reasons is so the cheese curd can gently flow out by gravity and is not damaged by a curd pump. Although curd pumps are now very gentle. Nevertheless, many vats are on gantry's, balconies and the like. It is though a slippery environment and it is easy to get hurt when you slip. Also the gantry takes a lot of space. A nifty way to get away from all these issues is a lifting platform. Work in the vat when it is low and lift it when you want the curd or yoghurt to flow out. We have supplied quite a few of these units. The Food Centre Wales has a 600 liter vat on such a platform.
