We are thinking of producing organic ices using our Jersey herd. WE use emulsifers and stabilisers. We ahve been told we need these for shelf life.

Can we go organic and losse our E nos ingredients?

Interesting, I have had discussions with two people today concerning this matter.

With correct mix formulation it is possible to eliminate emulsifier use in ice cream making but it is very difficult to produce a commercial ice cream of satisfactory shelf life without using stabilisers and hence E nos.

It is possible to buy organic stabilisers so high quality organic ice cream of satisfactory shelf life can now be produced.
