how microflora get the ability to resist phage?
because of the evolution? I have read that some artisanal "back-slopping" cheese starter can resist phage. can phage evolve? |

Yes phage can evolve!
Artisanal cultures tend to be more phage resistant. They tend to have a very complex microbial flora and there may also be a complex phage carrying relationship called pseudolysogeny or the unstable phage carrier-state operating. However, the composition of these cultures changes on sub culturing, propagation, and there performance is somewhat unpredictable hence the development of defined strain cultures. |
