The fat content is normally determined by analysis. There are a number of acceptable methods. 

The normal fat content of commercial evaporated milk is around about 20%. There is a range.

Assume only water lost for your calculation. So you can expect about 12% fat in your case.

Question: How do you calculate the fat percentage of evaporated milk?

Description: What is the math in calculating fat percentage of condensed whole milk?

Assuming 6% fat milk is condensed to half of the original volume, What will the fat percentage of the reduced milk be?

Does only the water content evaporate from the milk or does a part of milk solids & fat evaporate too?
