I am looking for the recipe to make Saint Marcelin and Saint Felicien cheese. |

I am aware of St Marcelin cheese. This is normally made from goat milk although cow and/or sheep milk may also be used. Final cheese is usually around 8 cm or so in diameter and about 2 cm thick. The cheese has a blue-green mould on the surface.
Since both these these cheeses origanted from France you may wish to contact some of the French research institutes or a manufacturer for more information. The Union de Sociétés Coopératives Fromagères Françaises - Union Scoff-manufacture both cheeses. Perhaps other browsers can help? |
