Yes phage can evolve!

Artisanal cultures tend to be more phage resistant. They tend to have a very complex microbial flora and there may also be a complex phage carrying relationship called pseudolysogeny or the unstable phage carrier-state operating. However, the composition of these cultures changes on sub culturing, propagation, and there performance is somewhat unpredictable hence the development of defined strain cultures.

how microflora get the ability to resist phage?

because of the evolution?

I have read that some artisanal "back-slopping" cheese starter can resist phage.

can phage evolve?
