Welcome to the forum.
From the brief description of your problem it would seem that your odour is being caused by the the action of moulds on sorbate in the cheese. A number of mould species can produce a hydrocarbon, 1,3-pentadiene (Horwood et al. 1981), by the decarboxylation of sorbate. 1,3-pentadiene has been described as having a “kerosene" odour. This has been fairly well described for Feta cheese (use Google scholar to find primary sources). |

After big mold probs we have added 250 ppm of sorbate to cheese. Now some cheese has oily odor. No odor if sorbate left out but mold problem. Help wanted.
