4, visit on farm or workshop

If consumers know about how cheese is made ,they will be more likely to try this new dairy food (in china)

but sanitation is very important,I have heart that some cheese plant reject any visit ,due to the potential contamination.

2. whey protein

although whey protein concentrate is a higher value-added product, the cost of UF device and the complex process for farmers are big problems

Ricotta and other whey cheese: yield of ricotta cheese is really low,so sometimes cheesemakers add whole milk into whey to increase the yield and the texture more or less.

to feed pig or pet: low value-added

beverage:package is a problem

so cooperative or a whey product company near cheese workshop will make it easier to utilize whey protein.

usually,a high P/F is needed when making cheese,namely,sometimes cream may be separated from whole milk.

retail (direct to consumer):but package and transport are big problem.

bulk: send to bakery and/or restaurant

sour cream: easier to store

establish cooperatives can make it cheaper and easier to store and transport.

this post is focus on dairy in china.

raw milk is a kind of low value-added product.

So,small-scale dairy farmers often get little money from raw milk,which results in poor management of cows,even adding water or other additive such as H2O2, other protein...

I think cheesemaking will give small-scale dairy farmers more independence and benefit.

then ,in order to reduce the cost as much as possible,developing side products of cheese making is crucial.
