Your request is the first. I will include something on the yield of Gouda over the next few months. Sorry not a priority for me at present.

In the meantime you may wish to read the following paper; C Brito, L Niklitschek, L H Molina, I Molina (2002). Evaluation of mathematical equations to predict the theoretical yield of Chilean Gouda cheese. International Journal of Dairy Technology 55, 32–39.

The authors appear to be recommending the Van Slyke yield equation for predicting the yield of Gouda. If this is what they mean, and I always wanted to ask them whether their equation F7 (cited as coming from Coggins) is a typographical error and not the classical Van Slyke equation, then you may find the Cheddar cheese calculators on this site
http://www.dairyscience.info/index.php/cheese-yield.html to be useful. Note I have not tested them for this purpose!

Emmons ( D. B. Emmons) and his colleagues have a range of papers that may be relevant to you. I recall at least 2 in the J Dairy Science- use Google Scholar to search.
