it is suggested that kefir should be fermented at room temperature,i.e. 20-30C(I think)

but my room is a little cold ,about 10C,so I keep kefir in a bottle with warm water,I do not test the temperature of warm water.

these pics are caught when 18hr after mixing milk and kefir grain.

you can observe that the kefir grain is producing gas.

today,somebody give me a kefir grain, a lovely cluster!

mix kefir grain and milk ,and ferment for 24 hr,seperate the kefir grain and drink kefir or let kefir ripen for some days more.

I am so curious that how kefir grains are made???can I make a new kefir grains without old ones?

I only konw that the content of biomass of kefir grain are protein ,fat and polysaccharide.

I will put the pics later.
