Hello everyone, I'm sure that this forum is well above my needs but I've reached a dead end so if someone could help it would be great.

Does anyone know how to make Tuma cheese?

I have also sent Professor Zeppa an Email advising of your posting. He has direct experience of Toma cheese and may be able to help you.

for the Toma Piemontese PDO technology and for the Tuma 'd Trausela technology. This cheese is a particular type of Toma produced in a small area near Turin (Piedmont, Italy).
