Hi all!

I would like to know if ST can tolerate pH <= 3.8 and even grow.

Any help?

Apologies for delay in approving post. Found it prior to deleting many months of SPAM.

You probably have the answer by now?

Some strains of Streptococcus thermophilus can exhibit slow growth down to about pH 4.2. This is probably the limit. Other strains can grow to about pH 4.4.

Loss of viability would be expected as time at pH 3.8 is increased.
