Hey everyone,
I am currently developing ice cream recipes for a client who do not want to use sugar, glucose, etc. she only allows agave, honey, maple and date syrup (a common product in the middle east where I live). it's really hard to balance the recipe cause all of these sweetners contain a lot of water. any thoughts on how to resolve the problem? Thanks! |
