We have a simple recipe to utilize the whey which is rich in lactose. Just add 120 g of sugar per litre of whey and 20 ml of lemon juice. Serve chilled. It tastes good and you can make a big money if you have a good market for this product.

Best to contact suppliers of raw materials. If the whey is "sweet" the stabilising system will be different from when it is acidified. Acidified drinks typically use pectin (several brands around) or MCC to stabilise.

This is an area that has been 'well worked' over many years! There is a lot of 'scattered' information, some of it in the trade journals going back some 25 years or so.
Not really a topic for me. Have you looked at the patent literature? |
