The lactoperoxidase system (Lp-system) is a potent natural antimicrobial system that has many uses including preserving milk under emergency conditions when refrigeration is not available or in developing countries. The system has been described and has FAO approval for use under prescribed conditions. The LP-system in raw milk required activation before it an exert a protective effect. This is achieved by the addition of a hydrogen peroxide source and some additional thiocyanate. There are several ways in which the hydrogen peroxide can be supplied including the use of e.g. glucose oxidase/glucose, liquid hydrogen peroxidase and sodium percarbonate. STABILAK is a product for activating the LP-system in the field and is commercially available in sachets containing thiocyanate and sodium percarbonate. STABILAK is manufactured in Nicaragua by a company operated by Alvaro F. Velazquez .
